Indian Eggy Bread recipe

An Indian twist to French Toast

A classic brunch or quick lunch, snack or lazy dinner, eggy bread, French toast or gypsy toast. Whatever you called it growing up, it’s something often forgotten about but all the ingredients are usually in the kitchen making it easy to make and delicious so add an Indian influence to waken up the tastebuds with this flavoursome eggy bread recipe. You can also experiment and add other spices which you enjoy such as cumin for extra chilli for more heat.

Indian Eggy Bread recipe

Ingredients

4 slices of bread
4 Eggs
1/2 teaspoon Chili Flakes
1 Onion (medium sized , finely chopped)
1 teaspoon Ginger (Paste or finely chopped if fresh)
1 Tomato (small , finely chopped)
2 tablespoons Coriander (chopped)

Equipment

 

Method

Whisk together eggs and chilli flakes in a bowl.
Add ginger, onion, tomato and coriander to the egg mixture.
Whisk.
Heat oil in a pan or heat up a panini maker/grill.
Soak each slice of the bread in the mixture and add to the hot pan.
Add some more of the eggy mixture to the top of the bread for extra gooeyness.
Cook the bread on each side for 5-7 minutes until they are crisp from the outside and cooked throughout.
