Love Biscuits – Lavender heart biscuits
There is something so comforting about the smell of freshly home-made biscuits. Taking the time to choose your ingredients and flavourings can be very therapeutic and relaxing. Biscuit recipes are simple and easy to prepare. Almost everyone has a biscuit cutter hidden in a drawer or even a simple upturned glass can be used for this purpose.
The following recipes use one of the most sophisticated herbs from the mint family – Lavender. Of course, this is not the first herb that comes to mind to add to biscuits, however, the flavour is very subtle and gives the biscuits a sweet flavour without being too overpowering.
Lavender can also be used to flavour salads, cheeses, desserts etc but must be used sparingly as it’s quite a strong flavour. It is the perfect herb for relaxation, reducing the cortisol levels in the body which produce stress.
Lavender Heart Biscuits
Makes 15 (approximately)
Ingredients
100g good quality butter (slightly softened)
75g caster sugar
175g plain flour (sifted)
lemon zest from a small lemon
2 tsp dried lavender
2 drops vanilla essence
Method
Line a baking tray with parchment paper.
Place the butter, caster sugar and lemon zest in a large bowl. Using a wooden spoon cream the butter and sugar together until the ingredients are light and fluffy.
Gradually add the sifted plain flour and continue to mix until the ingredients turn into a ball.
Turn out onto a lightly-floured board and roll out the dough to a medium thickness (about 1cm).
Cut the dough into biscuit shapes with your choice of cutter. This is where you can have real fun with different shaped cutters!
Place biscuits on parchment-lined baking tray and bake in a medium pre-heated oven at 180 degrees for 10-12 minutes (keep an eye on the timings as the biscuits can overcook very easily).
Then relax and enjoy the delicious flavours of lavender biscuits with a refreshing cup of tea.
