Quick lunch and dinner recipe using cod

Lots of flavours in this super easy to make dish.  Makes a filling lunch or a lighter evening dinner.  Spices such as coriander, paprika and cumin give the fish coating a bit of life and the lemon/garlic/butter sauce is decadent.  So increase your fish intake this week with an easy to make baked cod.

What fish to use

We got some Cod on offer from our local fishmonger, you could also use Haddock, Hake, Pollock, Coley  or Whiting

Can this be frozen?

As we used previously frozen fish, we didn’t freeze it and it tastes a lot better eaten on the day it is made.

Baked Cod Recipe

Ingredients

1.5 lb Cod fillet pieces (4-6 pieces)
5 garlic cloves, peeled and minced
A handful of chopped fresh parsley leaves
5 tbsp lemon juice
5 tbsp olive oil
2 tbsp melted butter
45 g flour
1 tsp ground coriander
¾ tsp sweet paprika
¾ tsp ground cumin

Method

Preheat your oven to 200 degrees C.
Mix lemon juice, olive oil, and melted butter in a shallow bowl and set aside.
In another bowl, mix together flour and spices.
Set next to the lemon juice mixture.
Heat 2 tbsp of olive oil in a cast-iron skillet over medium-high heat.
Dip the fish in the lemon juice mixture then dip in the flour mixture.
Add fish and sear on each side.
With the remaining lemon mixture, add the minced garlic and mix.
Drizzle all over the fish fillets.
Bake in the heated oven for about 10 mins.
Remove from heat and sprinkle chopped parsley.
