Sunshine on Port of Leith
Port has this boring image, hasn’t it? Grannies drinking it at Christmas, Victorians sitting in the parlour, well throw all that out as its an amazing drink and, as well as Vermouth, we think everyone should be drinking more of it. We wrote about the launch of Port of Leith White Port here, and here is a simple way to enjoy white port as the Portuguese do.
This is usually a pre-dinner drink to awaken the appetite as a white port is a lot lighter than its red port relative. This cocktail just shouts summer, but it is a dark autumnal night tonight and I’m enjoying it very much. I’ve used sliced clementine here but you can also use orange, lemon or lime.
What is white port?
White Port is a fortified wine that is made by adding brandy to halt the fermentation of wine, leaving residual sugars which give sweetness to the finished drink. The earlier in the fermentation process the brandy is added, the sweeter the port will be. White port isn’t as bitter as its similar cousin vermouth but can be used as a substitute for vermouth in cocktails.

Ingredients
75 ml Chilled Port of Leith White Port
75 ml Good quality tonic water
Slices of Clementine
Ice
Method
Fill your glass with ice-cubes
Pour over the port
Top up with tonic water to taste
Garnish with a slice of clementine (I added more into the glass as I had sliced them)
