Baked Avocado Egg Topping Ideas

Not only are these baked avocado eggs delicious on their own with just a sprinkling of salt and pepper. There are endless variations of toppings, here are a few to start off your baked avocado journey.

  • Meat Cooked and crumbled bacon or chorizo.
  • Fish – chopped smoked salmon or trout.
  • Herbs Parsley, chives or coriander.
  • Cheese Grated parmesan, cheddar, mozzarella or crumbled feta.
  • Veggies: Chopped tomatoes, peppers, spinach, mushrooms or corn.

Easy Baked Avocado Egg Recipe

Ingredients

    • 2 avocados
    • 4 eggs
    • salt & freshly ground black pepper

Instructions

Preheat the air fryer to 200C.
Split avocados in half and remove the pit.
Gently scoop out some of the pulp to make the hole bigger to make more room for the egg.
Place avocado halves in the air fryer, I used some tin foil to stabilise them

Crack an egg into each avocado hole.
Bake for approximately 10 minutes or until the whites are set and the yolk is cooked how you like it.
Check the eggs halfway through.
Add your toppings.
