Changing Perceptions of Scottish Cookery
Chef Mark Greenaway has come a long way from being chucked out of his Home Economics class back in the day!
His three AA Rosette restaurant stunning the Scottish foodie scene with his arty creations, he has now released a book which illustrates his spectacular-looking dishes as well as the recipes on how to make them yourself.
Interspersed between the recipes is Mark’s story. Why he did the book, his background and stories about the suppliers he uses.
It’s more than a cookbook, it’s really a look at Scottish cookery giving readers the ability to see that modern Scottish cooking is much more than haggis bon-bons!
On top of the recipes there is a glossary of terms, easy to follow basic recipes (always handy to have!) plus a stockists list to help you along your way to emulating Mark in the kitchen.
By producing this book, let’s hope that Scottish food, chefs and producers get the recognition they deserve.
