Indulge your inner New York Italian with this cheats air fryer chicken parmigiana. A lucky too good to go bag contained some breaded chicken breasts, so we decided to make some cheats chicken parm to bring some ba da bing into our dinner. (Promise no more crap Italian American stuff)
Crispy breaded chicken smothered in a homemade tomato sauce and topped with gooey mozzarella and parmesan.
Chicken Parmigiana Recipe
Ingredients
2 Breaded chicken fillets
For The Sauce:
1 tablespoon olive oil
1 large onion chopped
2 teaspoons garlic granules
100g tomato puree
Salt and pepper to taste
1 teaspoon dried Italian herbs
Water
For The Topping:
Half a ball of mozzarella cheese sliced
Grated parmesan cheese – enough for a handful of cheese.
fresh chopped basil or parsley
Method
Place the breaded chicken in an air fryer at 180 °C and cook for 5 minutes.
Whilst the chicken is cooking, make the sauce.
Heat oil in saute pan and then fry the chopped onion for around 3 minutes. Then add garlic, tomato puree, herbs and enough water to make a sauce (about 150ml)
Bring to a simmer.
Once the chicken has cooked, remove it from the air fryer and place it aside.
Add some of the sauce to a baking dish and place the chicken onto the sauce.
Cover the chicken with the rest of the sauce.
Add the mozzarella slices and grated parmesan to the chicken.
Return to the air fryer and bake until the cheese is bubbling and melted and the chicken is completely cooked through (approx 10-12 mins)
Sprinkle chopped parsley or basil on top of the chicken and serve.
Serve with mashed potatoes, salad or pasta.
