Le Favori – Les Sources de Cheverny 1 Michelin Star dining in the Loire Valley
Based within the spa hotel of Les Sources de Cheverny in the Loire Valley in France, is Le Favori. This one Michelin-star fine dining gastronomic restaurant is headed up by chef Frédéric Calamels.
Le Favori has a calming ambience where the surroundings of the hotel grounds are encouraged inside through the glass walls.
The menu at Le Favori utilises the natural flavours of the Loire Valley, which are enhanced by the skill of Chef Calamels.

As I was visiting as part of a press trip, we did receive a different menu from the standard one. This was to showcase the variety of dishes that are available at Le Favori.
You’ll know that we appreciate a good bread, and here at Le Favori it was as expected. Fluffy on the inside, crisp and chewy on the outside with a rustic nod to the surrounding countryside.
Spiny cucumber marinated in Garum from Tours and Solgne caviar – Served with Vouvray sec 2019, Vincent Foreau
White radish, monkfish fillet rubbed with wild nettle, rapeseed oil emulsion and acidulous condiment. Served with Anjoy – La Croisee des Chenins – 2017, Eric Morgat.
Roasted Touraine Fennel, seared blue lobster and head juice. Served with Cour-Cheverny “Eugene Magliore” 2016, Somain de Huards.
Roasted veal sirloin from Aveyron, confit new potatoes in moss and lichen broth. served with Terrasse du Larzac 2020, Domaine de Montcalmes
Selles sur Cher ravioli and smoked eggplant. Served with Menetou-Salon “Vignes de Ratier” 2015, Domaine Pelle.
Sunflower honey, ephermeral meringue and garden sage. Served with Coteaux de L’Aubance “Les Trois Schistes” 2022, Domaine de Montgilet.
I’m afraid to say I enjoyed the food, service and company that much that I made no notes. I went with the flow and enjoyed the evening.
It is clear that the produce is the focus of Chef Calamels. Strong, flavours which did not fight amongst each other, what I feel Michelin dining should be.
