Quick and Easy Meatball Pasta
We had some leftover sausages and a need for a quick dinner. This is a quick and speedy one to make that wound suit lunch or dinner. We used pork sausages here to make your meatballs, we assume you could use any other type.
Ingredients
6 plump pork sausages
olive oil
1 onion, finely chopped
1 tbsp oregano
2 garlic cloves, finely chopped
250g fresh tomatoes, quartered.
1 tbsp tomato paste
400g pasta – we used penne
Method
Cook the pasta according to instructions.
Squeeze the meat from the sausage skins, and place the sausage meat into a bowl,
Mix together the sausage meat with oregano and one clove of chopped garlic.
Roll the sausage meat into walnut-sized balls.
Heat some oil in a frying pan over medium heat and cook the meatballs until golden.
Remove the meatballs and set aside.
Add chopped onion and the other chopped garlic clove to the pan and cook until softened.
Add chopped tomatoes, tomato purée and enough water from the cooked pasta to make a sauce.
Cook on a simmer for 5 mins.
Add the meatballs and cook for a further 5 mins.
Add the cooked pasta to the pot and stir through.
Divide among bowls and scatter with basil and parmesan.
