Butter

Good quality butter can make a huge difference to the flavour of your food.   Herb butters are simple to make and easy to store. When you need to liven up a mid-week meal or add another flavour to a plate of vegetables or plain fish – herb butters are easily available. With the addition of herbs, this can make a very healthy option for your food.

Parsley Butter

Ingredients

A bunch of fresh parsley (approximately 100g)
100g good quality butter
Black pepper
Sea salt
Dash of freshly squeezed lemon juice

Method

Wash and finely chop the parsley
Combine all ingredients in a blender (or you can use a mortar and pestle) until smooth.
Keep in fridge or shape into a sausage style roll, wrap in cling film and freeze until required.
A delightful addition to your grilled fish or roasted veggies

You can use many types of herbs for your butter – sage, dill, oregano, watercress, tarragon etc.

Herb butters are great to use on grilled fish, grilled chicken or even use to enhance a delicious spread on a sandwich. You have a huge choice

and the best part is you can keep the butter for 3 months in the freezer.

A bottle of olive oil is part of your storecupboard essentials – how healthy is this beautifully coloured liquid. Some people are so enthusiastic about olive oil they even taste it like fine wine.

Herb oils

A good quality herb oil can transform your lacklustre salad with a delicious dressing or a simple dipping oil for freshly baked bread. Drizzle herb oils over lamb, chicken or fish.

You can make your own but there are so many varieties available – all generally of good quality and very long-lasting. They are great to use if you don’t have fresh herbs in your storecupboard.
