Homemade slow cooker corned beef is not only an easy dish to make, but cooking it in a slow cooker saves cash as well. Cooking it low and slow, makes this a tasty and affordable dish. We used a salt beef silverside cut from Swaledale Butchers giving us thick slices to serve with our Sunday lunch and thinner slices for sandwiches.
This dish is popular on St Patrick’s Day, but really should be an all year round dish. Perfect with potatoes of all kinds be they boiled, Hasselback, roast or Greek style potatoes for something different.

Instructions
How to make corned beef at home.
Place the onion, carrot, peppercorns, bay leaves and brown sugar into the slow cooker.
Add the silverside on top. Add the malt vinegar and fill with water until you completely cover the meat. Cook on low for 8 hours.
Slice and serve.

- 1.5 kg silverside
- 1 onion roughly chopped
- 1 carrot roughly chopped
- 10 peppercorns
- 2 bay leaves
- 50 g brown sugar
- 100 ml malt vinegar
- water to cover
