Mrs Foodie was allowed out to Edinburgh to visit the Edinburgh New Town Cookery School for a night of tapas with Chef Omar Allibhoy and Olive it! Omar is a lovely chap and has worked under Ferran Adria at El Builli and with Jason Atherton. He now has his own tapas restaurants in the UK called Tapas Revolution. (here’s hoping he opens up in Scotland soon)
The Olive it! Campaign is to raise the awareness of olives and how to utilise them in the kitchen and not to just use them as a decoration.
Dessert
We started by making a dessert which consisted of goats cheese, olive oil and candied cherries and olives. We had to make the dessert first as it needed time to set before use.

Nibbles
We then moved onto marinating olives in two ways. One with chilli and dried oregano and the other with garlic, ginger, cardamom, kaffir leaves and cinnamon. The cardamom one was the best for me. Lots of flavours.

Meatballs
Olive stuffed meatballs with a rich tomato sauce. I’ve never been a huge fan of meatballs. Generally due to being brought up with cheap mince so the thought of a huge lump of it doesn’t make my taste buds jump. Omar talked us through making the meatballs and stuffing them with an olive and then making a rich olive and tomato sauce to create a delicious meal.
