Peaches soaked in Brandy
Christmas is coming and one of the things I have always wanted to try has been a jar of peaches soaked in brandy. It hasn’t been the top thing on my Christmas want list – world peace, lottery win, just one of those things I’ve went ‘need to try that’ but never have gotten around to it. So I’ve made my own!
Soaking the peaches in brandy makes what is an everyday dessert dish, lux. Add some cream, or ice cream and you have a decadent dessert.
Peaches soaked in Brandy
Ingredients
6 peaches
1 stick of cinnamon (or 1 tsp ground cinnamon)
325g sugar
2ooml brandy we used Bardinet (click here for cocktail recipes)
400ml water
Method
Add the sugar, water and cinnamon to a large pot.
Bring to the boil and simmer until the sugar is dissolved.
Slice the peaches (or add whole if you have large enough jars) and add the peaches to the syrup.
Poach until tender.
Pour the peaches into a sterilised jar with enough syrup to cover around two thirds of peaches.
Top up the jar with brandy.
Seal the jar.
Give the jar a shoogle gently to combine the syrup and brandy.
The longer you store the jar, the more the brandy soaks into the peaches.
