Grilled Chicken Caprese Sandwich

It’s BBQ season and we were asked by Swaledale Butchers to try out their BBQ Meat Box.  It contains everything you need for a BBQ, be it outside or a fake BBQ night indoors. With a couple of plump chicken breasts in the box, I thought let’s grill some chicken breasts add them to some pesto-slathered toasted rolls and then top with mozzarella and tomato.

Grilled Chicken Caprese Sandwich Recipe

Ingredients

2 Chicken Breasts
4 tablespoons Olive Oil
1 Clove Garlic
Pesto
Mozzarella Cheese, sliced
Tomatoes, sliced
Balsamic Glaze
4 Rolls

Method

Grill the chicken breasts and put them aside.
Slice the rolls in half and brush each side with olive oil.
Toast the rolls in a pan.
Rub each side of the rolls with the garlic clove.
Lather one-half of the rolls with pesto.


Layer the chicken, mozzarella, and tomatoes and drizzle with a little balsamic glaze.

Top with the other half of the bun.

A delicioiusly moreish grilled chicken caprese sandwich

Ingredients
