Recipe : Fried Halloumi with vinaigrette

Bring summer indoors with this zesty halloumi dish

 

Whilst the summer weather may not always be the best, one way to keep the summer vibes going is to keep cooking summer.  One of the staple ingredients in our house is halloumi.  Mr Foodie converted me to it many many years ago and we still love it.  This fried halloumi and vinaigrette dish can whipped up in minutes and has so many levels of flavours.  Capers, lime, mustard and coriander.  There is enough here for a light lunch for two or starters for four.

Ingredients

Cheese
1 pack of halloumi cheese
2 tablespoons olive oil
2 level tablespoons well-seasoned flour
Dressing
juice of 1 lime
1 tablespoon capers
1 tablespoon white wine vinegar
1 clove garlic, finely chopped
1 teaspoon wholegrain mustard
1 level tablespoon chopped fresh coriander leaves
2 tablespoons extra virgin olive oil
Decoration
salt and black pepper

Method

Unwrap and drain halloumi cheese.
Then slice the halloumi and set aside.
Add all the dressing ingredients to a bowl and whisk together.
Heat oil in a frying pan over medium heat.
Coat the sliced halloumi in seasoned flour on both sides.
Add to your hot frying pan and cook until golden.
Place onto a warmed plate and drizzle with dressing.
Add some sprigs of coriander for some oomph.
Eat!
