Recipe : Luxurious Banana Bread

Banana bread was the hit of lockdown 2020, and there’s no need to forget it now.  This version has brown butter and brown sugar to add some extra luxury to this moist and moreish cake. The brown butter adds caramel and nutty taste and the brown sugar adds that molasses richness. Whether you are eating it for breakfast – we don’t judge, or covered in custard or with a cup of tea this banana bread is really the best you will taste.

Ingredients

115g butter
200g plain flour
3 ripe bananas
100g brown sugar
1 egg
1 tbsp vanilla extract
1 1/2 teaspoons bicarbonate of soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Method

Follow the instructions HERE to make brown butter.  Set aside to cool.
Preheat oven to 180C/Gas 4.
Grease a 1 lb loaf tin.
Add mashed bananas to a large bowl.
Then stir in brown sugar, egg, vanilla extract and browned butter.
Whisk flour, bicarbonate of soda, cinnamon and nutmeg together in another bowl.
Fold flour mixture into banana mixture.
Pour into greased loaf tin.
Bake until cooked, usually about 45 minutes.
