Refreshing Melon, Lemon and thyme salad

The weather may be all topsy turvey at the moment however this refreshing melon, lemon and thyme salad will surely cheer you up.  Serve as a refreshing snack, or starter or serve with alongside some panna cotta for dessert.

Ingredients

1/2 Honeydew melon

1/2 Galia melon – or two types of any melon you have.

1 1/2 teaspoons fresh thyme leaves

1 teaspoon (5ml) elderflower liqueur or cider or rose wine

1 teaspoon (5ml) lemon juice

Directions

Toss the chopped melon, thyme, liqueur, and lemon together in a medium bowl.

Cover the bowl and refrigerate for at least an hour.

Stir the salad again.

Serve on top of ricotta as a refreshing starter.
