Serves 2
2 blood oranges (in season)
1 tbsp fresh rosemary leaves, finely chopped
1 tbsp runny honey
3 tbsp whipping or double cream
Method
- Wash and peel oranges carefully. Try to remove all pith.
- Cut orange into medium size slices.
- Preheat oven to medium setting. Place orange slices on flat based baking tin covered in baking paper or foil.
- Drizzle over honey of your choice. Sprinkle over a few finely chopped rosemary leaves. Roast in oven until oranges are nicely carmelised.
- Place cream in a blender. Add finely chopped rosemary leaves.
- Serve orange slices, topped with rosemary whipped rosemary cream.
