Simple, luxurious baked scallops recipe
A simple recipe for tender scallops baked in their shells with homemade garlic herb butter. This dish is ideal for a starter, BBQ, having friends for dinner or a special occasion.
Scallops are such delicious seafood that they don’t need much to make them even tastier. We used prepared scallops but read on if you want to know how to prepare fresh scallops as well.
How to prepare fresh scallops for cooking
You can buy scallops already cleaned at most fishmongers or supermarkets. If you have bought some in the full shell, don’t panic. Tap the shells lightly, they should close a little bit. This shows that they are alive and fresh. Give them a sniff. They should smell like the sea but not fishy. If they don’t make a little jiggle of movement or smell fishy, put them back.
You don’t need any special implements, a blunt knife such as a butter knife will work. The knife is to break the shell hinge, not you! Hold the scallop in your hand and place the blunt knife between the two halves of the shell close to the hinge. Move your knife around the scallop until the shell pops open then run your knife under the scallop along the inside of the shell to remove the scallop.
Next, you need to clean and remove the membrane plus the roe from the scallop. Pull off the membrane around the scallop and rinse the scallop with cold water and pat dry.
Baked scallops with garlic herb butter recipe
Ingredients
12 scallops with shell
200 g unsalted butter
½ bunch parsley
3 medium garlic cloves
salt and pepper to taste
Method
Place the butter into a bowl and add chopped garlic and parsley. Season with salt and pepper and mix thoroughly.
Pre-heat the oven to 200°C/350°F/Gas 6
Place the scallops, in their shells, into a baking tray.
Place a teaspoon full of garlic herb butter on top of each scallop.
Cook the scallop in the oven for 3-4 minutes. The butter should be melted and bubbling cooking the scallops lightly.
Serve immediately.
