I can’t remember the first time I saw Rumbledethumps listed on a menu. I do remember going what the heck is this? It’s not exactly descriptive, suppose like bubble and squeak and Colcannon don’t say what they are either.
What is Rumbledethumps?
Rumbledethumps is a traditional Scottish dish which is made with creamy mashed potato, sliced cabbage and topped with grated cheese and then grilled to melt the cheese.
What to serve Rumbledethumps with?
It is delicious on its own, or as a side with corned beef, steak pie, haggis and much more.
Why is it called Rumbledethumps?
I have no idea. From research, it is said that the dish originates from the Scottish Borders. Do you know why it is called rumbledethumps?
What potatoes to use for Rumbledethumps?
Use whatever potato you would use for mashed potatoes.
What type of cabbage to use for Rumbledethumps?
We used a winter cabbage for this recipe, savoy cabbage would also work well. Just don’t use a red cabbage as it isn’t quite what is needed flavourwise here.
What type of cheese to use for Rumbledethumps?
We love a mature cheddar, it seems like it was made just for this dish.
How to store the Rumbledethumps?
You can make all the steps before the baking stage and store in the fridge for easy cooking. Once cooked, store any leftovers in an airtight container, in the fridge. They will last for up to three days. You can reheat it in the oven or in the microwave.
Can Rumbledethumps be made Vegan?
Yes, Just use dairy-free butter and vegan cheese.
Scottish Rumbledethumps Recipe
Ingredients
1kg of potatoes
1 cabbage
75g of butter
150g of mature cheddar cheese, grated.
1 bunch of Spring Onions, sliced.
How to make Rumbledethumps – Step-by-step instructions
Peel and chop your potatoes.
Boil the potatoes for 15-20 mins until they are soft.
Slice the cabbage roughly and cook in 50g butter until it is softened.
Once the potatoes are cooked, mash them with the remaining butter and season.
Preheat the oven to 180C.
Mix the cabbage and spring onions through the mashed potatoes.
Place the mixture into an ovenproof dish.
Top with the grated cheese and then bake until the cheese has melted and turned golden brown.
