Babu Bombay Street Kitchen (India) Vs Fire In Babylon (West Indies)

In this first unofficial meeting of Commonwealth Nations in 2014, two of Scotland’s leading street food exponents go head to head.

Representing India at this one-off pop-up restaurant in Shawlands’ Glad Cafe will be Babu Bombay Street Kitchen. They will be serving the starter for the evening, in the form of their famous ‘sev puri’, a hugely popular crispy, tangy, spicy street snack, straight from the streets of Bombay. The delicious morsels come layered with a trio of chutneys — tamarind, 100 clove garlic & red chilli and green chilli & coriander —and are topped with crispy lentil vermicelli, fresh coriander, green chillies & lime.

Babu will also be offering two main course choices for the evening: ‘Keema Pau’, another Bombay street staple, made with spicy tender chicken and peas and ‘Vada Pau’ – a juicy, spicy, tamarind and coriander chutney potato burger.

Fighting the West Indies’ corner will be Caribbean cooks Fire In Babylon. Serving the Trinidadian classic roadside snack ‘Doubles’, made with channa aloo wrapped in two fluffy fried breads, as well as West Indian showstopper ‘Curry Goat’ – slow cooked for at least five hours to ensure maximum succulence. To finish off the evening Fire In Babylon will present the dessert, with none other than a Jamaican Ginger Cake. Thankfully not the McVities kind, but their own homemade, rich, moist version, served dripping in a dark rum glaze.

The event will be set in the performance space in the Glad Cafe in Shawlands in Glasgow’s Southside and will feature background Bollywood movies and reggae DJs to give your tastebuds some audio-visual accompaniment.
