Baked Cod

Course lunch, Main Course

Ingredients
  

  • 1.5 lb Cod fillet pieces 4-6 pieces
  • 5 garlic cloves peeled and minced
  • A handful of chopped fresh parsley leaves
  • 5 tbsp lemon juice
  • 5 tbsp olive oil
  • 2 tbsp melted butter
  • 45 g flour
  • 1 tsp ground coriander
  • ¾ tsp sweet paprika
  • ¾ tsp ground cumin

Instructions
 

  • Preheat your oven to 200 degrees C.
  • Mix lemon juice, olive oil, and melted butter in a shallow bowl and set aside.
  • In another bowl, mix together flour and spices.
  • Set next to the lemon juice mixture.
  • Heat 2 tbsp of olive oil in a cast-iron skillet over medium-high heat.
  • Dip the fish in the lemon juice mixture then dip in the flour mixture.
  • Add fish and sear on each side.
  • With the remaining lemon mixture, add the minced garlic and mix.
  • Drizzle all over the fish fillets.
  • Bake in the heated oven for about 10 mins.
  • Remove from heat and sprinkle chopped parsley.
