Preheat the oven to 200℃/fan 180℃/gas mark 6
Crumble the haggis into a bowl.
Open the spring roll or filo pastry sheets.
Wet a tea towel and wring it out so that it’s damp. Use this tea towel to cover the sheets of pastry to stop them from drying out between use.
Take a sheet of pastry.
Place it on the worktop so that it looks like a diamond, with a corner pointing towards you.
Add a palmful of haggis, in a rough sausage shape, to the bottom of the pastry sheet.
Fold up the bottom corner over the haggis.
Then fold over one side and then the other. It should look like a filled envelope.
Next, roll all the way up to the top. Seal the end of the pastry with some water.
Add the spring roll to a baking tray.
Continue with the rest of the spring rolls.
Place into the oven and bake until golden brown. This should take between 15 and 20 mins, depending on your oven.
Let the spring rolls cool slightly and serve with some dipping sauce of your choice.
