Jocks Loaf Recipe - Scottish Tea Bread

A scottish tea bread known as Jocks Loaf in Glasgow

Ingredients
  

  • 125 g Butter
  • 350 g flour
  • 225 g sugar
  • 225 g sultanas
  • 1 teaspoon bicarbonate of soda
  • 2 eggs beaten

Instructions
 

  • Preheat your oven to 220c/425F/gas 7
  • In a bowl, rub the butter into the flour until it is flaky.
  • Add the sugar and sultanas.
  • Mix well.
  • Dissolve the bicarbonate of soda into the beaten eggs.
  • Add this to the flour/fruit mixture.
  • Mix well.
  • Place the mixture into a 900g loaf tin.
  • Place into the oven.
  • Cook for 10 minutes, then lower the heat to 190c/375f/gas 5 and cook until the inside is cooked.
  • This could take up to an hour, depending on your oven.
  • Turn out onto a wire tray and cool.
  • Delicious served with butter.
