Preheat your oven to 220c/425F/gas 7
In a bowl, rub the butter into the flour until it is flaky.
Add the sugar and sultanas.
Mix well.
Dissolve the bicarbonate of soda into the beaten eggs.
Add this to the flour/fruit mixture.
Mix well.
Place the mixture into a 900g loaf tin.
Place into the oven.
Cook for 10 minutes, then lower the heat to 190c/375f/gas 5 and cook until the inside is cooked.
This could take up to an hour, depending on your oven.
Turn out onto a wire tray and cool.
Delicious served with butter.
