Traditional Scottish Rumbledethumps Recipe

Rumbledethumps is a tradtional Scottish side dish ofmashed potato, with sliced cabbage and topped with cheese.

Ingredients
  

  • 1 kg of potatoes
  • 1 cabbage
  • 75 g of butter
  • 150 g of mature cheddar cheese grated.
  • 1 bunch of Spring Onions sliced.

Instructions
 

  • Peel and chop your potatoes.
  • Boil the potatoes for 15-20 mins until they are soft.
  • Slice the cabbage roughly and cook in 50g butter until it is softened.
  • Once the potatoes are cooked, mash them with the remaining butter and season.
  • Preheat the oven to 180C.
  • Mix the cabbage and spring onions through the mashed potatoes.
  • Place the mixture into an ovenproof dish.
  • Top with the grated cheese and then bake until the cheese has melted and turned golden brown.
